Bak op 150 °C gedurende 25 à 35 minuten, afhankelijk van de dikte, tot ze lekker krokant zijn. Laat afkoelen op een rooster.  </li><li data-section-id="10n7ij2" data-start="1308" data-end="1432">Snijd de zalm met een scherp mes in gelijkmatige blokjes van ± 5 mm. Houd koud. </li><li data-section-id="1wilege" data-start="1433" data-end="1667">Meng de sjalot, de kappertjes, de mosterd, de olijfolie, het limoensap en de rasp, de sojasaus, de sesamolie en de bieslook tot een gladde dressing. Breng op smaak met zout en peper. Breng op smaak met zout en peper. </li><li data-section-id="hok8ez" data-start="1668" data-end="1810">Schep de dressing vlak voor service door de zalm. Werk af met cress, dille, een paar groentechips en een drizzle olijfolie. Zet apart op kamertemperatuur. </li><li data-section-id="1q2t64m" data-start="824" data-end="935">Controleer de vongole: gooi schelpen weg die niet sluiten bij een tik.</li><li data-section-id="ljpm0i" data-start="936" data-end="1126">Verhit een grote pan met deksel op hoog vuur. Voeg olijfolie toe en stoof de sjalot en de knoflook 2 minuten. Voeg de chilivlokken toe.  </li><li data-section-id="1enbzdd" data-start="1127" data-end="1295">Voeg de vongole en de witte wijn toe, zet het deksel op de pan en laat 3 à 4 minuten stomen tot alle schelpen open zijn.</li><li data-section-id="qtvz55" data-start="1296" data-end="1457">Haal de pan van het vuur. Roer de misoboter erdoor in klontjes tot een gladde, gebonden saus. Gooi schelpen weg die gesloten blijven.  </li><li data-section-id="wrpl52" data-start="1458" data-end="1619">Schep de rijst of bulgur in diepe kommen, lepel de vongole en de saus erover en werk af met peterselie en lente-ui.</li></ol><p><em>Monteer de misoboter in klontjes op een pan van maximaal 70 °C. Boven dat punt breekt de emulsie en schift de saus. </em></p>						</div>

Breng op smaak met limoensap en zout. Laat 10 minuten trekken.  </li><li data-section-id="1ms5cot" data-start="1098" data-end="1284">Verhit een grillpan of barbecue tot hoog vuur. Grill de scampi’s 2 minuten per kant tot ze mooi gekleurd zijn en lichte grillmarks hebben. </li><li data-section-id="19mkzu1" data-start="1285" data-end="1423">Serveer de scampi’s direct met de mangosalsa, limoenpartjes en extra verse koriander.</li></ol><p><em>Grill de scampi&#8217;s ongepeld. De schaal beschermt het vlees tegen de directe hitte, geeft meer smaak en voorkomt dat ze uitdrogen. De inkerving langs de rug zorgt ervoor dat de marinade toch indringt.  </em></p>						</div>

Bekleed twee bakplaten met bakpapier. </li><li data-section-id="19x7a46" data-start="813" data-end="1058">Verdeel de aardappelwedges over een bakplaat, besprenkel met olijfolie en kruid met zout en peper. Bak 30 à 35 minuten tot ze goudbruin en krokant zijn. Keer halverwege om.  </li><li data-section-id="1igo6wj" data-start="1059" data-end="1260">Kruid de visfilets met zout en peper, haal ze door de bloem, dan door het ei en ten slotte door de panko. Druk de korst goed aan. Leg de gepaneerde filets op de tweede bakplaat en besprenkel ze met een scheutje olijfolie.  </li><li data-section-id="jteri3" data-start="1261" data-end="1501">Schuif in de oven bij de wedges en bak 15 à 18 minuten tot de pankokorst diepgoudbruin is en de vis gaar. </li><li data-section-id="120sgdb" data-start="1502" data-end="1626">Meng alle ingrediënten voor de tartaardressing en breng op smaak met peper en zout. Zet koel weg. </li><li data-section-id="tki2k2" data-start="1627" data-end="1832">Schik de vis en wedges op de borden. Serveer met een flinke lepel tartaardressing, de gemengde sla met een scheutje citroensap en citroenpartjes. </li></ol><p><em>Ajoutez les cornichons et les câpres seulement juste avant le service dans la base au yaourt. Cela évite que le liquide des cornichons ne fasse trancher ou ne dilue la sauce lors d’une conservation prolongée. </em></p>						</div>

Giet af en houd warm. </li><li data-section-id="14i81g6" data-start="838" data-end="1034">Verhit een royale scheut olijfolie in een brede braadpan en stoof de ui en de bleekselder op middelhoog vuur tot ze zacht en glazig zijn.</li><li data-section-id="quyw0q" data-start="1035" data-end="1104">Voeg de knoflook toe en laat nog 2 minuten meestoven.</li><li data-section-id="8ggiip" data-start="1105" data-end="1166">Blus met de witte wijn en laat de helft verdampen.</li><li data-section-id="17jqefe" data-start="1167" data-end="1308">Voeg de visfond, de laurierblaadjes en de room toe. Breng aan de kook en laat 10 minuten zachtjes pruttelen. </li><li data-section-id="1kt8557" data-start="1309" data-end="1409">Leg de kabeljauwstukken in de saus en pocheer ze op laag vuur gedurende 6 à 8 minuten.</li><li data-section-id="1y6pg20" data-start="1410" data-end="1573">Voeg de gepelde garnalen toe de laatste 2 minuten, zodat ze net gaar zijn. Verwijder de laurierblaadjes. </li><li data-section-id="x84o56" data-start="1574" data-end="1616">Breng op smaak met zout en peper.</li><li data-section-id="nt3rf0" data-start="1617" data-end="1797" data-is-last-node="">Schep de aardappelen in diepe borden, lepel de kabeljauw, garnalen en saus erover. Werk af met gehakte peterselie en citroenrasp. </li></ol>						</div>

Voeg de wortel en de knolselderij toe en laat 5 minuten meestoven. </li><li data-section-id="bgazr8" data-start="778" data-end="937">Voeg de courgette en de venkel toe. Blus met de bouillon en gaar 8-10 minuten op laag vuur. De groenten blijven beetgaar.  </li><li data-section-id="tryuk9" data-start="938" data-end="1133">Kruid de kabeljauw met zout en witte peper. Bak de filets kort aan in een warme pan met boter tot ze licht kleuren. </li><li data-section-id="hx7a5r" data-start="1134" data-end="1312">Leg de filets op een ingevette ovenschaal. Gaar 8-12 minuten op 180°C tot een kerntemperatuur van 62°C. </li><li data-section-id="att9sk" data-start="1313" data-end="1456">Werk de groentebrunoise af met een klontje boter, citroenrasp en peterselie.
