Hak de knoflook fijn, snij de paprika in blokjes en spoel de bonen af met water. Hak de koriander.<\/li><li>Fruit de ui en de knoflook aan. Voeg daarna het paprikapoeder, de cayennepeper en het komijnpoeder toe. Rooster een paar minuten en bak vervolgens de paprikablokjes mee. Laat 5 minuten sudderen.<\/li><li>Hou 3 eetlepels tomatenblokjes over en voeg de rest toe aan het mengsel, samen met de mais, zwarte bonen, peper en zout. Bak goed aan.<\/li><li>Vul de wraps met het groentemengsel en leg ze in de ovenschaal, bovenop de 3 eetlepels tomatenblokjes. Zorg dat er geen lucht aan de binnenkant van de wraps kan. Overgiet met een kommetje tomatensaus en de geraspte kaas.<\/li><li>Zo\u2019n 10 tot 15 minuten in de oven zorgt voor een heerlijk krokantje. Maak ondertussen de guacamole door de avocado\u2019s, limoen, koriander en wat knoflook te mengen. Kruid met peper en zout! Je serveert de enchilada\u2019s lekker warm, met koriander, zure room en guacamole <em>on top<\/em>.<\/li><\/ol><p><strong>Spice it up!<\/strong> Verander de toppings naar keuze.
