Herhaal dit met het overige filodeeg en stapel op elkaar tot de rol een doorsnede van 6 cm heeft. Wrijf de volledige rol daarna in met boter, dek af met een vochtige theedoek en laat 6 uur rijzen in de koelkast.<\/li><li>Verwarm de oven voor op 200 \u00b0C (heteluchtoven) of 225 \u00b0C (elektrisch).<\/li><li>Maak de vulling! Kook 450 ml water met de suiker en voeg al roerend de semolina toe tot er een dikke massa ontstaat. Laat met de deksel op afkoelen.<\/li><li>Klop de massa in een keukenmachine los met ricotta, ei, sinaasappelschil en het vanillemerg tot een zijdezachte textuur.<\/li><li>Snij de gekoelde rol deeg in plakken van 8 millimeter. Druk met je vingers het midden van het deeg naar buiten en maak plat tot een schelp.<\/li><li>Vul deze schelp met de vulling en druk het deeg eromheen \u2013 niet volledig toe! Leg ze op het bakpapier en bak 45 minuten. Verlaag na 15 minuten de oven tot 150 \u00b0C (heteluchtoven) of 175 \u00b0C (elektrisch).<\/li><li>Afkoelen maar! Bestrooi met poedersuiker voor een extra zoete smaak.<\/li><\/ol><p><strong><em>Handige tip!
