Hol ze uit en laat 1 cm rand staan. Blancheer de courgettes 2 minuten in gezouten water en koel meteen weer af.<\/li><li>Kook de Ebly in de bouillon tot deze net gaar is en laat dan afkoelen. Snij 200 g sjalotten in brunoise, samen met de wortel en knolselder. Stoof aan in olijfolie en meng met 15 g tijm en de platte peterselie, eieren en kaas. Voeg de Ebly toe en breng op smaak met peper en zout. Is je vulling niet stevig genoeg? Voeg een extra ei toe of wat paneermeel. Vul de courgettes op en gaar ze gedurende 20 tot 25 minuten verder in een oven van 165 \u00b0C.<\/li><li>Maak ondertussen de cantharellen proper en snij de grote stukken kleiner. Stoof de fijn gesneden sjalotjes aan en voeg de cantharellen toe. Deglaceer met witte wijn en reduceer. Voeg de bouillon toe en reduceer met een derde. Voeg de room toe en laat inkoken. Monteer met koude boter en passeer de saus.<\/li><li>Dresseer de saus over de gegaarde courgette en garneer met wat verse kruiden. Smakelijk!<\/li><\/ul><p><em>Extra kooktip: vul de courgettes na het uithollen met zout om het vocht weg te krijgen. Dep daarna droog met keukenpapier.
