Bij veel vlees doe je dit in verschillende keren. Kruid tijdens het stoven enkel met peper en zout.  <\/li><li>Voeg het vlees daarna toe aan de gebakken uien en strooi er de bloem over. Laat even goed meebakken. Giet de wijn in de (warme) pan waarin je het vlees aanbakte om alle stukjes goed los te maken. Meng deze daarna onder de uien en het vlees.   <\/li><li>Kneus de jeneverbessen en stop ze samen met de kruidnagel in een thee-ei. Leg deze samen met een bouquet garni van tijm laurier in de stoofpot. Meng hier de veenbessenconfituur en de salie (in kleine stukjes) door en roer alles om. Laat het gerecht een tweetal uurtjes sudderen op een zacht vuurtje.   <\/li><li>Maak nu de veenbessensaus met de veenbessen, de suiker en een scheutje water. Laat dit geheel ook zacht pruttelen op een laag vuur. <\/li><li>Snipper in de tussentijd de sjalot fijn en plet de look. Snij grote cantharellen eventueel doormidden.
